Earlier this week I was finally able to make it home before 2pm and I was so happy. I felt so free. I haven't been home this early from class for the past three semesters, and it felt awesome. So awesome that I didn't know what to do with all my time. Yeah, I could should have done homework, but I was too happy for homework. So would that mean I am Ms. Grump when I have to do homework? Most likely. Probably.
So with my spare time, I made this yummy cake - A Lemon Bunt Cake
I usually don't include sprinkles, but I was too lazy to take them out. Besides, it looks more festive this way!
Ingredients:
1 package of lemon/yellow cake mix (just about any Pillsbury cake mix will do)
4 eggs (beaten)
1 cup of milk
1 package of instant lemon pudding (approx 4oz)
0.5 cup of oil
How to:
shift the cake mix and lemon pudding into a large bowl
pour in beaten eggs
add milk
add oil
mix well with spatula (electric mixer - 4 minutes on medium) - I prefer not to use this because it causes the cake to break when it's baking.
Bake at 350 for 45-50 minutes
